Having the weekend taken up my sports, there wasn't allot of time to have intense cooking.  So one of the things I love to have when in a time crunch and looking to keep it light is a simple salad.  With my husband on a low calorie, low fat diet I need to keep it light, fresh but tasty.  There were allot of the items on sale this week at Smart & Final. Hoping everyone is enjoying their holiday season so far.  It's been cold and rainy here in Las Vegas and I love it.  Reminds me of my beautiful state of Washington.  It's such a blessing to have family, friends, delicious food and a warm place to enjoy it all.  I never take any of this for granted.  I was more than pleased to join in on the festivities that Smart & Final pulled together for us Smarties.  This year...the mission is to spread a little holiday cheer. What are your Christmas holiday traditions?  Our family traditionally has Gumbo for Christmas.  Mainly because we are so burnt out of the traditional Thanksgiving dinner.  However we do make one exception.  To accompany the sweet dishes I always make my sweet potato souffle because....well....it's just plain yummy!  Now, this is not a sweet potato casserole.  It's slightly different and will keep you at the table just a bit longer because you'll be fooled to think it's so light and fluffy you need just a bit more.
