Salad

I LOVE breakfast! It’s my favorite meal and I could eat it all day, you? My favorite thing to do is to go out to eat…shhhh…don’t tell my family. But only because I love that there isn’t any mess to clean up, right?!!! There’s just something sweet about being able to talk to your family, eat a meal AND not have a mess to clean up afterwards.  Dishes are overrated.

BUT, I live in the world of reality {my frugal reality} and we eat in more often then I care too admit. Making breakfast is my joy! It makes me happy knowing that I’ve sent my family into the world with full belly’s. And not just full belly’s but when I cook something that’s farm raised or healthy for them…I’ve won all around.

You already know I Lurrrvvvveee Fresh & Easy. I just do. But what can I make with my Fresh & Easy purchases on a budget for the whole family? So glad you asked.

Meet my $.42 breakfast.

This whole breakfast cost $.50/per person for 5 days. The trick is to make it interesting everyday and that…I can do!

Here’s what I purchased and how my $8.39 purchase really looks like on paper:

  • Tomatoes – $.98
  • Green Onion – $.98
  • BellPepper – $.98
  • Eggs – $.99/dozen  (I only use the egg white)
  • Bacon – $2.50
  • Cheese – $.98
  • Spinach – $.98
  • Potatoes – $.98
Here’s the math.  $8.39 divided by 5 days (that’s about how long the food will last) = $1.67.  $1.67 divided by 4 people (that’s our family #) = $.42 per person per day.  Yes there is tax but at $.42 each, I’ll give or take a few pennies.

The $.98 price is what I grab up at Fresh & Easy and even if I don’t need it, I’ll cut the veggies up and freeze them. The eggs were on special at Dollar General.

Onions

This save me time and money!  The only thing about the green onions I don’t like is when you thaw them, they aren’t as crunchy – and I love the crunch!  But for an omelet, it’s ok.  Plus my dad always did/does this. I have fond memories of him cutting up all the veggies and freezing them as a child.  Isn’t it funny how something so tiny can stick to our memory.

Eggs
