This is the site that I see most often. He’s from Montana, what can I say. He loves his meat. My cowboy does a chunk of the cooking because he loves to and I let him. Especially when the summer starts and he can fire up his grill to ease my bickering about how hot it is to cook inside. We’ve been in the house now for 2 weeks but it’s been a grueling two weeks to get things done just so we can live in the house. We have the twins birthday coming up and in the midst of all of this we decided to take a day off and chill. Enjoy the fact that we are actually “in” our house and enjoy it.
This wasn’t going to be anything fancy. Just the fam (especially since the yard isn’t complete) and some really good food. I knew I wanted to let my hubby make the rub for the meat and cook up some hot dogs for the kiddie pies. Keeping it simple but making it yummy is the goal. Oh, and making sure I picked up water balloons was an essential part of my shopping trip since we can’t step foot on the grass yet. The kids need to be able to still have fun. Sitting back and enjoying life is what I’m looking forward to. Making meals at home for the family to enjoy sounds like a peace of heaven since we’ve been so crazy busy over the past 9 months. On the menu for tonight din din is:
- Trip Tip Chunks BBQ’d rub
- Corn on the Cob with garlic
- Red Potato Salad
Entertainment:
- WaterBalloons & Kids
We’re using our Cattlemen’s TriTip that we picked up from Smart & Final which was pretty big. I’m sure we’ll have plenty leftover (which is what I’m hoping for). We thought our yard would be done by the time we had or gathering but sadly it was not. Making it almost impossible to entertain but we did out best. The meat came out A-mazing!
Here’s the recipe that we’ve been holding onto to:
Directions
| Ingredients:
1 head Garlic, make sure to roast garlic in over until it’s a golden brown and soft to mash
|
Step 1 | If using lemon, squeeze onto meat and rub vigorously. Then rub garlic mixture on both front and back of meat. |
| Ingredients:
1/4 teaspoon Chili Powder
1/4 teaspoon Cayenne Pepper
1/4 teaspoon Onion Powder
1/4 teaspoon Salt
1/4 teaspoon Ground Cumin
1/4 teaspoon Dried Mustard
1 teaspoon Brown Sugar
1 teaspoon Coffee Ground
4 tablespoons Your Favorite Meat Tenderizer, you can add lemon to break up the meat as well but make sure to do it before you add the other dry ingredients.
|
Step 2 | Rub on meat evenly, cover and store in refrigerator for at least 3-4 hours for best flavor. You can also do this over night for optimum flavor. |
| Step 3 | Cook each peace of meat onto direct heat until desired doneness. |
| Step 4 | Placing a piece of foil over meat will allow for continuous cooking. |
You can also find this recipe on Kitchen Monki here. We decorated the perimeter of the yard even though we couldn’t get on the grass yet. It still added a bit of ambiance.
Put out the Pesky bug repellant candles. I’ve had these for over 10 years and they look better to me every year. They actually do work!
And seriously, what backyard bash is complete without water balloons? It’s just a must, especially in the desert here. My two helpers. I’m enjoying this age because they really want to help and really want to make mommy’s life easier. OH I’m going to hold onto this.
Just getting started early before the fam arrives and that’s fine by me. They’ve worked so hard to help us put together a family evening. Thanks for the tip about Smart & Final. I LOVE grilling but at my house I do it since I started my grilling lessons as a child. Aren’t we lucky to live in the desert where we grill year round because of the perfect grilling weather? I couldn’t survive without it! Oh your backyard is looking great!
