Did you know June is National Dairy Month?  Maybe you knew by the Retail Sales cycles post I did just a bit ago.  Recently I wanted to try a new recipe for Mother’s Day so I started my journey visiting the Vons.com. {which is an affiliate of Safeway Stores}.  Clicked on Recipes & meals.  I knew I wanted something sweet because that’s what I enjoy making.

Putting together my love for sweets, my husband’s love for caramel and my mom & grandmother’s love for all things shortbread…I just plugged in those ingredients to the search bar and this is what came up:

Caramel Shortbread Squares

You can find the full recipe on Vons.com recipe site.  The picture of my finished product looked slightly different due to my complete inability to wait for the caramel to harden.  So, even though it looks slightly different I can assure you it is yummy!  I could truly eat just the caramel and shortbread all day.

When getting all of my coupons & ingredient needs together, I generally do all my shopping while the kiddos are at school because it enables me to focus while I’m matching my coupons and hopefully spotting ones I didn’t know about.  How about you?  How do you guys shop?

This is a super easy step by step recipe and super easy cleanup.  I will however offer some suggestions to the preparation and cooking of this dessert.

Here are the easy steps I did to making this super yummy caramel shortbread squares:

Steps 1-3 are super easy.  Grab your ingredients and make the crust.  Easy!!  Steps 4-5 are my fave because I’m a huge fan of condensed milk.  I love the stuff!  Step 6 you will not find on the website because I added it in. My 90 year old great uncle shelled some Pecans from his yard and I had to use them.  It added such a great element to this desert.  You can truly add any kind of nut and make this your own.   Step 7 – So what I did was only place nuts on half of the pan because I wasn’t sure if I was going to sharing this with someone that might have a nut allergy.  I know my son isn’t allergic but if he has too many he will definitely have a reaction.

Step 8 is a bit tricky.  All your doing is melting the chocolate in 20 second intervals but just keep in mind that the thinner the chocolate is the easier it will be to spread over the very thing caramel.  You can almost place it in the frig after step 7 to harden for a bit.

You should definitely place it in the frig after Steps 9 to allow the caramel to harden but it was so yummy I couldn’t wait!  Hence the plate that’s doused in caramel. But oh so good!  This would be a great easy to make item for kids to help with.  My daughter in the first picture had a great time helping out.

My mom, grandma, kids and hubby loved it!!  We even shared a bit with their neighbor.  This will for sure be a recipe that will become a family tradition and hopefully be one that brings my kids warm family memories when they grow up.
