I love Sunday Mornings! I know…I’m crazy but I do. It’s the last day before the work week and I I love for the four of us to sit down and enjoy each other over a meal I make with love for them. This mornings special Banana pancakes (of course there are side dishes but for time purposes we’ll focus on the main part)
My Grammy has made her southern Sunday morning pancakes for years and today I want to share it with you all:
- 2 cups of Bisquick mix (I personally love the Fresh & Easy pancake mix)
- 2 tablespoons of butter (more or less…LOL)
- 1 egg (I always take the cord out–it’s just me)
- 1/2 cup of water
- a dash or two of cinnamon
- a splash of vanilla (we can’t be exact because life isn’t exact {smile})
- fruit of choice for topping or in the mix (if in the mix no more than 1/4 cup)
Mix ingredients together with whisk or fork. I let mine get a little fluffy. Preheat your skillet with a tablespoon of oil. I use olive oil. Pour onto hot skillet and flip after rim of pancakes have lot’s of little bubbles (don’t you love the description, that’s what my grammy use to always say. You can’t really tell from the above picture but I love to make them silver dollar style (small & lot’s of them).

We don’t usually use pancake syrup but if we do you MUST use pure maple syrup. It’s not Log Cabin….it’s just pure heaven. And of course I love F&E Pure Maple Syrup. A bit pricey but it’s my splurge for the fam. Normally we will use fruit topping and I’ll make a juice syrup. All that consist of is frozen of fresh fruit (for example strawberries because they’re easy) and water with a tiny bit of sugar. That’s it!
Add whip topping if you like or just syrup! Yummy deliciousness at your table for the family. I love it when my twins request a specific meal I’ve made for them, just because they love it!
