Wednesday: Leftovers
Thursday: Restaurant.com (I’ve been missing it for the past couple of weeks)
Friday: Hopefully leftovers or salad (really…enough cooking right!!)
Saturday: Turkey Meat Loaf with Red Currant Sauce w/Garlic Mashers
Sunday: One-Pot Roasted Chicken Breasts with Kale & Potatoes w/ Marie Calendar’s Cornbread with Honey Butter
Junior Mint Brownies
Prep time: 25 minutes Cook time: 50 minutes (there are a ton of variations of this brownie)
1-5.5 ounce box Junior Mints
1 1/2-cups butter, melted
3-cups sugar
1-tablespoon vanilla extract
5-large eggs
2-cups all purpose flour
1-cup cocoa
1-teaspoon baking powder
1-teaspoon salt
Directions: Preheat oven to 350 degrees
[1] Grease a 13×9 inch baking pan. In a large bowl, stir together butter, sugar and vanilla. Add eggs, beat until well blended. Stir in flour, cocoa, baking powder and salt. Blend well.
[2] Reserve 2 cups batter. Spread remaining batter in prepared pan. Arrange Junior Mints in a single layer over the batter. Spread the reserved batter over Junior Mints. (such a lovely surprise)
[3] Bake for 50 to 55 minutes or until brownies begin to pull away from sides of pan. Cool completely in pan on wire rack. Cut into 16 squares, or if your like me…8!
